After a trip to Amsterdam I just had to find a recipe for the delicious cookies that would come out at the end of the meal. I couldn’t get over the unique blend of spices and the crisp cookie that would become perfectly soft and chewy when warmed by (or dunked in!) the hot coffee that accompanied the cookie.

This year I chose to decorate some of my batch of cookies like traditional American gingerbread cookies, but I also decided to add blanched almonds to a handful of the cookies as well as try my hand at creating a sandwich using homemade almond paste – delicious!
